前回もリポートした京都府庁で開かれる「こだわりマルシェ」。
6月に開かれたので、朝一から行ってきました。

ここは安くて新鮮な野菜がおすすめ。
今回は初の「葉とうがらし」を購入してみました。
お店のおじちゃん曰く「じゃこと煮る」のがおすすめとのこと。
じゃこがなかったので、煮詰めて佃煮風に仕上げてみました。
無農薬のにんじんの葉っぱはジェノベーゼ風のペーストに。
平飼い卵でジンジャー・バナナブレッドを。
野菜が痛まないうちに保存食品にしておきました〜。

今話題のココナッツオイル。
ちゃんと知りたいので、本を読んでみました。

ココナッツオイルは飽和脂肪酸で、中鎖脂肪酸というのが特徴です。
具体的には…
他の料理用オイルと違って、
体内ですぐにエネルギーになって、体脂肪にはなりません。
そして、細菌やウィルスにも効果があり、
肌や髪につけて乾燥を防ぐこともできたりします。
他にもいろいろと体にいいことずくめです！

さっそく購入してお料理に試していますが、
一番のお気に入りはトーストにつけて食べる方法。
あっさりとしていてバターよりも健康的なので気に入っています。
香りも強くないので、どんなお料理にも最適です。

ただ、ココナッツオイルと言ってもいろんなものが販売されているので、
良質のものを探すことが重要なようです。

先日、ご近所の串揚げのお店「万年青（おもと）」さん主催の
「おだしの会」に参加しました。

前々から気になっていた「おだし」について、
京だしの本家である「うね乃」さんのかつおやこんぶのおだしについて、
現在の日本のだし事情なども含め、
創業明治36年、天然だし一筋の「うね乃」の社長さんより
いろいろなお話をお聞きしました。

産まれて初めて、ほんものの鰹節と削り機にて鰹節を削る経験もしました！

日本食が世界遺産に認定されても、
化学調味料で味付けされた日本食が日常になりつつあるのが現状。
このまま天然だしをとっているお店や家庭がなくなってしまっては
本当の意味での日本食とは言えないと感じました。

かつおやこんぶでとったおだしは体に良いだけでなく、
とってもまろやかで香りが良いこと！

化学調味料に慣れてしまった方は
一度おいしいおだしを使ってお料理してみはどうかと思います。
体にすーっと入っていく感じで、違いがすぐわかるのではないでしょうか。

残念ながら、鰹節を削る時間は作れそうにないので、
うね乃さんのおだしパックを利用させていただこうとさっそく購入。
おいしくて体にやさしい、そして便利な商品があってよかった〜。

ご近所のえびすやさんの食パンを２種類ご紹介。
1つは玄米パンで、もう1つは全粒粉の食パンです。
（全部で玄米、全粒紛、プレーン、レーズン、くるみ、お茶の6種）

日本で売られている一般的なパンは「イーストフード」という科学物質にて
人工的に膨らまされたパンがほとんどです。
そして、この物質は体への危険性が高いとされています。

そもそも、日本のパンは「真っ白でふっくらして甘いのがおいしい」という基準なので、
こういったパンが大量生産されるのだと思います。
ヨーロッパのパンは固いのが普通ですが、イーストフードは使われていないです。
その分、噛めば噛むほど味が出ておいしいです。

えびすやさんはどのパンもこだわりの国産小麦と水と沖縄のお塩のみを使用し、
自家焙煎酵母を使って発酵されています。
添加物はいっさい入っていないので、食べた時の味が普通のパンとはぜんぜん違います。

最近日本でも食の安全が重要視されていますが、
これぞ安全でおいしいパンのお手本ではないかと思います。
